How to Make Vegan Raw Chocolate Love Hearts & Mini Eggs

img_3122A bit late in the day, but better late than never, I hope! These were made with ingredients I won in a recent Raw Chocolate Company giveaway. We’re looking forward to having another go and substituting some of the ingredients, meanwhile these happily passed the taste test: husband and gardener friend (here to prune trees and replace broken flags) demolished them and gave them their seal of approval. (Gardener took some home for his wife!)

We began with a basic recipe by Eighty20Nutrition but halved the amount, changed the nuts and greatly reduced the amount since they were chopped – we didn’t need as many as the whole pistachios in the original recipe – we also added vanilla. I would have used almond butter instead of tahini but didn’t have enough. Next time.

We also thought we might use Goldenberries next time, they are a bit tart and very fruity. You could also try dried sour cherries or cranberries (I like them infused with apple juice).

For those of you who like to spice it up, you could add a little chilli powder.

So here’s how we did it – all organic where possible, measurements very approximate, substitute like for like where you wish.

Vegan & Gluten-Free.

Ingredients

120g Cacao Butter*

About 50g Sweet Apricot Kernels,* finely chopped but not ground (you could use almonds or any other nuts)

 1/4 Cup Cacao Powder*

75g Dried Mulberries*, lightly broken up if using small moulds (reserve 1/4 Cup whole ones for the end)

150g Tahini or Almond Butter

1/4 Tsp Organic Vanilla Extract

3/4 (three-quarters) Tbsp Maple Syrup

 Method

Place the tub of cacao butter in hot water until it starts melting (you can also use cacao butter buttons). Slide it out and break up until you have the amount you need, in this case, half a tub.

Place a Pyrex bowl over a pan of hot, but not boiling, water and slowly melt the cacao butter.

When completely melted, add the remaining ingredients except the reserved mulberries, stirring until mixed in.

Blend until smooth with a stick blender.

Fold in the remaining mulberries and if setting flat in a tray some larger pieces of nuts – pistachios work well.

img_3126Spoon into silicone moulds or into a baking tray and refrigerate for a couple of hours until set. Cut into slices if set in a tray.

(The moulds are inexpensive, we found ours on Amazon).

Best eaten from the fridge as home-made chocolate melts quicker than commercial chocolate.

They also keep in the freezer.

We made 15 hearts and 20 mini egg halves, which have gone into the freezer for Easter.

In Case You Miss Me, I’m Recovering From All The Decluttering!

From today, I’m taking a break to have some osteopathy and rest my body after a hectic few weeks of Christmas, family visits and mass decluttering of cupboards and wardrobes, alongside all the normal family support and blog-writing.

I’ve done a 3 week juice plan and flooded my body with healthy nutrients to see me through the busy times, now I need to take some time to rest and give my back a chance to unknot and my mind some peace and tranquility.

This is just one small cupboard that was still filled to the gunnels with my daughter’s school and university stuff – and the yellowing old French book on top? Mine from A Level French, a whole lifetime ago! It’s all gone now. The music books are having a new life with my daughter’s musical sons.

Dusty old classics and plays and poetry, from the 60s and 70s, all gone to the charity shop – and this scribble was inside the copy of Charlotte Bronte’s ‘Villette’, neither of my children are owning up!

It is quite daunting clearing out things you’ve loved or which belonged to people you love that have always just been there on shelves, in cupboards, on walls. But there comes a time when you just know it has to go!

I followed the advice in this post from Watching the Daisies, of placing a small bowl of salt in the rooms whch need decluttering –  it alters the chi or energy in the space, and, before you know it, things are magically winging their way out of your home to start another life elsewhere! It really worked!

I’ve scheduled some posts for while I’m away, but I won’t be able to respond to comments or questions until I return, so please forgive my silence.

Take good care of yourselves, be sure to replenish your energy stores once in a while.

500 Up: It’s Giveaway Time!

Yesterday, I received a lovely surprise in the form of a notification from WordPress that I now have 500 followers! I only began blogging just over a year ago, not having much of a clue technically, but having completed the Blogging 101 course I had gained a little more know-how and a few blogging friends, many of whom are still with me and have provided much-needed support.

My (at the time) newly-retired husband is very grateful to you all for keeping me occupied and out of mischief!

You can read a fuller review of the book here but briefly, Dale lost everything, his marriage, his home, his job and almost his life following a motorbike accident. His lifestyle didn’t help: he smoked, drank was overweight and had a heart attack.

He managed to turn his life around through healthy eating, juicing, exercise and a positive attitude.

It’s January: S.A.D.? Do What You Love!

I bought a new mug the other day. Well, actually, it’s a rather large cup that you need two hands to hold, one of those Friends-type ones that you can snuggle up with, full of hot chocolate*, in front of a cosy fire. It’s nothing special. It cost 99p in a local shop and is both dishwasher and microwave safe. It was what was written on the front that resonated.

I don’t usually like things with slogans, but this one says:

‘Do what you love!’

Being January, with its cold and damp grey days, and being a little susceptible to Seasonal Affective Disorder, I have learned to try always to have a project on the go to absorb my attention and give my brain something else to contemplate other than when is the sun ever going to wake up and the garden turn green again?

In the past it’s been family history research: when I finished my own, I helped someone else. I try to catch up on letter-writing too. Real letters with real ink written on real paper! I love to use a fountain pen, and this year I have my precious old one sent to me by my primary school teacher, Evelyn (you can read about it here).

21f65416-e275-4687-a6cc-13eef10a45aaI’m currently on my second week of a juice plan, so that has occupied me somewhat – and made me get some much-needed early nights! – but I needed something creative too.

Every year, when we take down the Christmas cards, I put them away for recycling and reusing in November for next Christmas. But I always think I should do it now because November is always such a busy month with all the other preparations and my back really suffers so that I’m always in pain at Christmas.

img_2968This time, when I saw the mug, it was like a message from the universe! So, here I am, doing what I love, making Christmas cards in January! Oh, and drinking my favourite liquorice and cinnamon tea.

This is also the time of year when the professional cyclists dust off their lycra, don their new team strips and bring us some much needed sun from Downunder!

The Tour Down Under began this week in Adelaide, just what I needed: sun, culture and men in lycra – and leading the family Velogames league after Stage 1 and 2 (I don’t even cycle, they take it very seriously) <wicked laugh!>

So I may be a little preoccupied for a while … with the cards I mean 😉

Veganuary

January has been designated Veganuary and even has its own website! 

It was such a success last year that I think it is probably here to stay.

40,000 people have signed up to try being vegan for a month and the website is there to provide support, advice, product websites and tasty recipes for people wanting to increase the plant-based element of their diet and reduce meat and dairy.

I am not about to go through all the whys and wherefores, others have done a much better job than I can, but I have decided to provide a Vegan category to house the information about being vegan if people wish to look it up.

Recently, I published Hanna’s post Plant Powered New Year which was her response to a specific question about whether a diet containing meat would have an effect on psoriasis. Hanna suffered with appalling psoriasis and is now mostly vegan after ridding herself of the misery of itchy, inflamed skin through juicing and a plant-based diet. Hanna was quite forthright in her language, which may not appeal to some, but she has had a rough journey to where she stands now as a beautifully healthy, energetic young woman and has just had her first book published called ‘Radiant’. It includes her story along with beautiful photography and tasty recipes to help achieve the same results.

Today, I have decided to provide links not only to her post but also 3 others which take a more softly-softly approach and give a guiding hand to those just beginning to look into the subject of ‘going vegan’.

The first is Rachel at Healthy and Psyched5 Tips For Transitioning To Veganism where she is at pains to reduce the guilt element so often present in such articles. Rachel says basically that you are not a bad person because you unwittingly – or even wittingly – eat something that has dairy in it at a family party for instance, and my favourite is not to throw away all your make-up, which is expensive to replace and such a waste, and which is exactly what I did!

The second post is from Feminine Boutique BlogHow To Go Vegan in 4 Steps This post gives links to sites, YouTubers and books where you can find the information you crave and the support. It is short and there is nothing to scare the horses (pun intended!) It too is written in an easy-going style and isn’t at all ‘preachy’.

Another interesting post is from Our Green Nation2016’s Top 10 Vegan Moments which lists interesting topics such as the American government, scientists and doctors giving vegetarian and vegan diets the thumbs up as being healthy and suitable for any stage in life, while the latest American Nutritional Guidelines are the most vegetarian-friendly ever; they feature the Sainsbury’s ‘Gary’ vegan cheese furore and the members of the USA Olympic team who have plantbased diets including a weightlifter.

Finally, there is even a website for teenage vegetarians and vegans: http://www.teenvgn.com It is a great site, describing iteslf as a social network for teen vegetarians and vegans, providing a safe place for 12-19 year olds to obtain information, recipes and exchange ideas. They even run a summer camp every year full of activities for 11 a 17 year olds. They encourage volunteering and put together care boxes for homeless people in local areas. They are sponsored by several reputable companies and supported by The Raw Chocolate Company.

What To Do If You Feel Hungry on a Juice Plan or Don’t Need To Lose a Lot of Weight

imageThis morning I was asked by Siobhan of Paris Here And There if there is anything she can do to avoid the hunger pangs on a juicing program and also to prevent her losing weight unnecessarily.

If you read my post yesterday, you’ll know that next Monday I am joining Jason Vale’s ‘Big January Clean-Up’ which involves doing the first 14 days of his 28 day SuperJuiceMe! plan (there is still time to sign up via the Juicemaster website, all coaching videos, shopping lists, recipes are free).

First, let me explain about hunger pangs.

It is normal to feel hunger in the first 3 days of a juice plan.

More often than not these are withdrawal pangs, not genuine hunger. Your body is getting everything it needs from the nutritionally balanced juices, blends and smoothies. What it is not getting is the caffeine, sugar, alcohol and hopefully nicotine it has become dependent upon and it is shouting at you very loudly about this restriction, as with any withdrawal from addictive substances.

And let’s make no bones about it: all these substances are addictive. Sugar has the same effect on the brain as crack cocaine and heroin!

Here are some tips and advice:

1. The way to reduce these withdrawal symptoms (headaches, cravings) is to taper off and finally quit in the 2 weeks before a juice-only program.

2. Once you begin the plan, keep well-hydrated, using herbal and fruit teas, warm water with a slice of lemon, as well as plain water; rest – go for walks in the fresh air, do yoga, rather than sessions at the gym – and watch or read inspiring films and books to keep you motivated. (See the suggested list at the end).

3. If you genuinely feel hungry, you can’t sleep for tummy rumbles etc. there are emergency rations you can turn to (see later).

4. The point of the plan is to give your digestive system a rest and allow your body to repair, renew and rest, so try to resist for the first 3 days.

5. Keep yourself occupied so you’re not thinking about food all the time.

6. Have your juices ready and don’t wait until you’re desperate before having them, then you won’t be tempted to grab a sugary snack or bag of crisps. Also, sip your juices slowly through a straw.

7. Try to find a juice buddy. If this is your first time, support is vital and you can either persuade a friend or family member to join you or find amazing support on Jason Vale’s Facebook page, where you can ask questions and get advice, or on Twitter/Instagram.

8. Keep reminding yourself why you’re doing it. Read up on the health benefits of juicing and arm yourself to fend off all the doubters and sceptics who will try to undermine your resolve.

9. Don’t be put off, the results will speak for themselves and will silence the naysayers.

10. Over 25 people, including some who tried to put me off, started juicing after they saw the amazing results from my first plan.

For those who don’t want or need to lose a lot of weight:

When I did the last 14 day juice challenge, I didn’t need to lose weight but this time after a cold, too much comfort food and lots of family visits/festive food I could do with it!

However, there are those who just want the re-energising health benefits or want to clear up their skin or reduce aches and pains and who have no wish or need to lose weight. I have compiled a list of things you can do if you fall into these categories.

You may still lose some weight just by the fact that you have cut out a lot of snacks and high fat/sugary foods during your juice plan, but you will slowly regain what you need when your body readjusts to what is normal eating for you.

You will generally only lose the weight you need to lose. 

I do these juice challenges 4 times a year. My first 2 times I lost  2 1/2 stones (35lbs) altogether. Now, I lose about 5 lbs as I don’t need to lose any more.

And for those who really do suffer genuine hunger pangs, there are things you can eat to alleviate them, but only in a dire emergency!

Tips for emergency rations or to prevent unwanted weight loss:

1. To allay hunger pangs or to avoid a big weight loss, stick to plant foods and oils as your emergency rations. You can add an extra juice, or a tsp of flax oil or coconut oil to a glass of juice.

2. To prevent digestive issues, I reiterate: stay away from processed and sugary foods, meat and dairy, coffee and alcohol.

3. Half a ripe avocado either on its own in the evening with lemon juice and cracked black pepper or blended into a couple of juices a day (1/4 at a time) will usually do the trick. It is normal to feel hungry in the first 2 to 3 days but then your body adjusts.

4. Hunger and thirst can be confused. More often than not, it is hydration you need rather than food. Again, keep hydrated using herbal and fruit teas as well as plenty of water.

5. You can add a tablespoon of ground organic linseeds (or other seeds) to your juices (this also helps if you have any problems with constipation).

6. Half a very ripe banana in the evening can also help.

7. If out and about and the avocados and banana are not an option, a healthy version of a fruit bar can help, but make sure it does not contain refined sugar, dairy or other additives, just pure fruit and nuts.

8. My go-to emergency ration is one of Jason’s ‘Juice in a Bar’ snacks. These really do replace a juice if you need to and are very filling.  Usually, I can manage only half.

9. You could add a higher calorie vegetable to your juices like sweet potato – I use these often in my own juices (usually to replace parsnips!)

10. Whatever you decide, always chew slowly and thoroughly, otherwise your tummy will object if it is already adapting to the juice program.

Bonus tip: Try adding some good quality pea or hemp protein powder to some of your juices to stave off the hunger and give your juices some extra oomph!

Most of all, remember that if you have to miss a juice or you do feel the need for extras, it doesn’t mean you have failed and you have to give up! Just pick up where you left off. You will still gain the benefits. Even if you just have one juice a day and cut down or cut out the processed, sugary stuff, you will feel more energy, your skin, hair and nails will benefit and if you need to lose some weight, then this will help.

Are You in Need of a Juice Boost?

I am!

Are you feeling heavy and sluggish, is your skin dull and dry? Are your hormones all over the place?

The seemingly endless Thanksgiving/Divali/Christmas/Hannuka/New Year season of festive food can leave us feeling tired and unhealthy, while the long dark days of cold and damp weather can mean not so much fresh air and exercise resulting in being a few pounds overweight. Centrally heated homes and offices make our skin dull and dry, our airways stuffy and our lungs prone to inflammation and infections. (This last is true of air-conditioning, too, for those of you in warmer climates).

Next week, I am joining Jason Vale’s Big January Clean-Up to clear out the rubbish and reset my body, to help it through these months of colds, coughs and central heating.

I will be doing the first 14 days of his 28 Day SuperJuiceMe! plan followed by 7 days of his SuperFastFood book/app, both of which I’ve done before and I felt completely re-energised afterwards.

I have to make a few adjustments to some of the juices as I am allergic to pineapple and lime, but I replace them with mango, papaya and lemon.

You don’t have to do the full 2 weeks, you could do a 3 day quickie or a 5 day pick-me-up, so long as you prepare and follow up with a plant-based diet so as not to put a strain on your digestive system during or after the challenge.

Remember, this is my personal experience.

Always check with your doctor before doing a prolonged juicing regime, especially if you’re on medication – some are more supportive than others.

It helps to find friends or online group support. I found my support on Twitter, but Jason has a facebook page where you can get all the advice and support you need, as does The Natural Juice Junkie.

A Surprise Christmas Present

Today, I was minding my own business, helping my husband make up the Christmas Ocado order when the postman arrived. There were the usual cards and statements,  but also a small padded bag. I looked at the back and saw the name and address of my old friend and former primary school teacher, Evelyn. Many of you will have read my tribute to her earlier on in the year. She had emailed that she had sent me card and so I was expecting to see her writing any day soon, but not on a padded bag.

I opened it and out fell a hard object wrapped in bubblewrap. The envelope had originally come from a bead and crystal shop and I thought she had sent me a crystal for Christmas. I carefully unwrapped it and to my astonishment out fell a very old fountain pen and propelling pencil – do you remember those?!

I couldn’t speak. I sat there with my mouth wide open and nothing coming out. When it did it was ‘Oh my god, oh my god, oh my god’ on a loop (my apologies to anyone offended by this) accompanied by my husband’s ‘What, what, WHAT?! I imagine we looked like a couple of goldfish in a bowl.

img_2735I held in my hand the very fountain pen and pencil Evelyn had used to mark the class register, write reports and letters to our parents, the same white and gold pen I had coveted all these years. I was only thinking about it quite recently and wondering if she still had it. And here was the set, looking a little the worse for wear, sitting in the palm of my hand. I was in shock.

This means so much to me, I don’t have the words to explain.

I looked inside the bag for a note, but all I found was a Christmas card wishing us a Merry Christmas and a Happy 2017 followed by the words ‘Over half a century now!’

Nothing about the pen and pencil. I desperately wanted to speak to her. I tried Skyping but there was no response. She is probably at her sister’s for Christmas and I will have to contain my excitement and inquisitiveness until the New Year!

I don’t quite know why I was so fascinated by this pen. I loved the gold pattern on it and I loved the black Indian ink Evelyn filled it with. I was 9 years old and this was my first experience of a fountain pen at close quarters. I was inspired by it. I loved her handwriting, big and loopy, very informal, arty and friendly. I would recognise it anywhere. To me, this pen set was symbolic of her youth and style, it was modern, unusual, fun. It is so slim and light. It also looked very posh to my impoverished eyes!

I have always loved using a fountain pen and I can’t wait to clean this one out and see if it still works. Wouldn’t that be something, after all these years?!

Needless to say, my husband had to finish off the shopping list all on his own, he didn’t get any sense out of me for the rest of the day!

Water: They Can’t Get Enough, But We Can Help!

Recently, while I was thinking of writing a post on hydration, there was a sudden deluge (pardon the pun) of articles and tweets on the subject. Everywhere I looked, someone was urging that I drink more water. I thought to myself, If I drink any more, I’ll float away! But as I sipped my regular morning hot water and lemon and then had a shower and washed my hair, cleaned my teeth and flushed the loo, I started musing on how much we take our clean water supply for granted and how much we complain about the incessant rain.

Have you ever experienced a drought, even temporarily? I have.

Have you ever had to use a stand pipe down the street in one of the hottest summers on record and queue up for a restricted amount of water, carry heavy containers home, ration it out, use the same washing water for all the family, then use it to flush the toilet that has had to be used several times without? I have.

Have you had to do this with a toddler still in nappies – cloth ones that needed sterilising? Or with a baby using feeding bottles? I have. Have you ever been heavily pregnant during a hot summer and had the water go off because of a burst pipe, making it necessary to walk a couple of streets away to the nearest public toilet for a day and a night? I have. During that hottest summer, I was also coping with a slipped disc.

It was indescribably difficult.

Yet our difficulties and inconveniences (pun intended) were nothing compared to those endured week in week out, by millions of families in developing countries where mainly wives, mothers, sisters and daughters spend hours every day walking miles to collect water that is often contaminated with bacteria, parasites and disease, for example E. Coli, Cholera and Hepatitis A.

Between 600 and 700 million people have no clean drinking water, while over 2 billion do not have access to toilet facilities.

While I was contemplating this, tweets began appearing on my timeline about Matt Damon and Gary White’s charity Water.org and the British organisation, Water Aid UK. Then purely by chance, someone called @jerrybottles liked one of my tweets. I looked them up. While I did so, two other companies showed up: Conscious Step and Three Avocados.

These companies have one thing in common: they are non-profit businesses that sell unique products to raise money for clean water projects around the world.

100% of their net profits go to these projects.

This all seemed serendipitous and I decided to promote their organisations via my blog. If one person buys one item after reading this, then I will feel like I’ve done something worthwhile.

These companies sell very different quality products and I want to point out that I haven’t been given any to promote, nor have I purchased or used any of them. Purely and simply, I looked at their web sites and products, read their missions and wanted to help in this small way.

First up is Jerry Bottles

Leicester-based businessman, Harun Master, set up his charity in 2011 to help fund and co-ordinate clean water schemes in India and Africa. Their stainless steel bottles – named after the large jerry cans used by women to collect their water – are stylish, dishwasher safe and sustainably produced. Along with Tobias Gould and Taj Bharma, he built a company whose mission is to educate about pollution caused by plastic bottles, encourage the use of refillable steel bottles and use the profits to provide safe, clean water – starting in Tanzania. As a bonus, the co-ordinates of each project will be printed on the base of the bottles so you can see where the proceeds from your purchase have been put to use. They keep costs and staffing low to maximise the funds available for the schemes.

They are also working with local shops and businesses to build a scheme whereby you can refill your Jerry water bottle for free when out and about. They aim to add to their range by working with designers to create additional quality bottles and accessories. The web site is informing and fun, as are their tweets!

Three Avocados is the fascinating name of a coffee company in St Louis, Missouri, founded by Joe Koenig in 2010 after a trip to Uganda. The poverty surrounding him inspired him to set up a company which sells 100% Arabica coffee – produced by small farmers in Uganda and Nicaragua for fair prices – and donates all its net profits to clean water projects worldwide. One of their partners is a women’s co-op which uses the money earned from growing coffee to send their children to school.

In Uganda alone, without clean water, 63 children die every day. Since the company started, over 20,000 people have benefited.

Women and girls are usually the ones who walk miles every day to collect large jerry cans of contaminated water. They are unable to work or attend school. They are at risk of assault. Providing clean water allows them to gain an education and employment as well supporting a healthier community.

Oh, and why is a coffee company called Three Avocados? Well, visit the web site and read their story – just have some tissues handy when you do.

Conscious Step is the brainchild of 3 like-minded men: Hassan Ahmad, Adam Long and Prashant Mehta, left their respective careers at the World Health Organisation, Engineers Without Borders and in Microfinance, and came up with the quirky idea of selling uniquely designed and manufactured Socks for Causes,  to combat Hunger and HIV/Aids, promote Education and provide Clean Water.

In partnership with Water.org net profits from these blue Argyle socks provide clean water for one person for 18 months!

I asked in my previous post ‘ What Colour’s Your Wee?! Water: Part 1 – Are You Getting Enough? Well, for some, this question is moot. They can’t get enough. What they can get is more often than not a long trek away and unsafe to drink.
