Mixed Leaf Avocado Salad with Walnut & Raisin Slaw & Lemon Tahini Dressing

image OK. So I reckon we’ve had enough smoothies and sweet treats for a while, time we had some more green stuff on our plates.

It was an unusually hot and sunny Bank Holiday weekend here in the UK – we’re used to it raining cats and dogs when you’ve got a family camping/bbq /diy weekend planned. My husband had been painting the garage all day and was all hot and bothered. At 6 pm he downed tools and announced he wanted takeaway pizza and salad for dinner! I forewent the pizza part, but here is this evening’s salad:

Mixed leaves – I had lollo rosso, rocket, lamb’s lettuce and cos – with cucumber and celery

Walnut and Raisin Slaw – Grated Cabbage and Carrot with chopped spring onions, walnuts and raisins in a Lemon Tahini Dressing, and black pepper

Sliced Avocado

Sweetcorn

Drizzled with more Lemon Tahini Dressing, Pink Himalayan Salt and Black Pepper.

All the colours of the rainbow. Simple as.

  2. 1) There is no such thing as “enough” as far as smoothies and treats go. 🙂 2) Have you tried GF pizza? We make our own sometimes with lots of toppings, its jolly nice. 3) Your salad looks and sounds delicious – the more colours the better, yes I agree, and finally 4) I’m having trouble sizing my pictures on here, are you finding the same or is it just me?

    1. 1) yes, but for the sake of keeping things blog-themed, felt I should post something raw and green on a plate occasionally 😉 2) yes, not fond, plus being vegan the lack of cheese is the thing – I was a cheese addict in my former life – plus, tomatoes upset me, so all in all would rather give it a miss, though the smell of my hb’s pizza is like torture! 3) thank you ☺️ 4) yes, it drove me crazy when first began but now I realise you have to click on the + or – twice to make it work – well, I do on the iPad. Same when putting in video links, have to do it twice for it to work.

      1. Arrgh….my photos are taking over the entire page, despite resizing them before putting them in the media library thing to upload. Its most annoying. I’ll keep trying though – its been 6 days since I last posted! 😮
