Choco Almond Truffles

image

Every time we make almond or tiger nut milk, we can’t bring ourselves to throw away the leftover pulp – we are of the waste not, want not generation – and it’s become a kind of subconscious challenge to come up with a different recipe everytime!

These came about by accident as often happens. It’s the end of the month and as we searched the cupboard for likely ingredients,  we weighed and measured what happened to be left, which wasn’t very much – it was definitely a case of Old Mother Hubbard finding the cupboard almost bare! – and what was there we used up.

We reached for dried apricots, but found one had gone very mouldy and had to throw the rest away. We went for figs, none left. Dates, 3. No seeds. A quarter cup of almonds was all that was left after making the milk. We even ran out of cases!

My husband kept saying we couldn’t do it, but I refused to be defeated. Stubborn is my other middle name! He was going to visit our son’s family and I wanted him to take some treats for our daughter-in-law. Try that, what’s in that jar? No, we haven’t any apple juice but we have an orange needs using. So, all in all, these turned out pretty well given the severity of the challenge.

They are little balls of protein, healthy fats, minerals and B vitamins, and taste moist and chocolatey.

But I’ll have to see what my daughter-in-law’s verdict is as I’m a little biased. Husband liked them though!

All ingredients are organic except the Maple Syrup. Makes about a dozen. Vegan, Gluten-free.

Ingredients

Approx. 1 Cup Almond Milk Pulp, squeezed as dry as possible

Half a Cup Raisins

3  Medjool Dates, pitted

Third of a Cup Almonds, ground

Quarter Cup Desiccated Coconut

Quarter Cup Goji Berries* lightly moistened in fresh orange juice + a few dry ones for decoration

2 Tbsps Melted Raw Coconut Oil

2 Tsps Maple Syrup

Small pinch of Pink Himalyan Salt

1 Mini Bar Goji and Orange Raw Chocolate*

1 -2 Tsps melted Raw Cacao Butter*

Method

Process all ingredients except the chocolate and cacao butter until it comes together when you press it.

Form into balls and place in the fridge to firm up while you melt the chocolate.

Melt cacao butter in a bowl over hot – not boiling- water and stir in broken up chocolate bar.

When melted remove from heat and dip treats in, placing them in small cases to keep them from rolling over.

Decorate each with a dry Goji Berry.

Place in fridge.

Keep well in an airtight container in the fridge.

While I was writing this up on a very wintry sleety Spring day, I was coincidentally listening to James Bay ‘I Need The Sun To Break’ (‘been in the dark for weeks’) then Suede Snowblind came on! Click the links to see the YouTube videos. I need some Raw Hot Chocolate!

Banana & Sweet Apricot Kernel Smoothie

imageThis gorgeously light and delicate smoothie was created on a beautiful Spring morning and I couldn’t resist adding a photo of these striking red tulips in amongst the forget-me-nots – the smoothie looks a bit peely-wally by comparison (Scots: look it up! One for you Scribbleartie 😉)

Have you ever had bananas and peanut butter? If so, you’ll love this. It has home-made Sweet Apricot Kernel butter in it, but you can substitute it if you wish. I’d just read a Raw Chocolate Company tweet about their special offer on Sweet Apricot Kernels and I remembered we still had a bag in the cupboard, so we put them together et voilà!

image                   Sweet Apricot Kernels are like small delicate almonds and can be used in the same way. You can make Sweet Apricot Kernel Butter and milk as you would with almonds.

B vitamins, healthy fats, protein and electrolytes in a glass. Sweet and simple, so what are you waiting for?

*

All ingredients are organic, vegan and gluten-free.

Ingredients

1 Small Ripe Banana

Handful of Sweet Apricot Kernels*

1 Tbsp Hemp Seeds*

1 Tbsp Chia Seeds*

1 Tbsp Raw Unsweetened Sweet Apricot Kernel Butter or Peanut Butter

1 Heaped Tbsp Gluten-Free Oats

1 Glass Unsweetened Coconut Water

*

Blend and relax.

This recipe is for Bernadette over at https://haddonmusings.com/ she hadn’t heard of sweet apricot kernels until she read my recipe for Oh-So-Choolatey Hemp Seed Coins – there are some more recipes which have them among their ingredients here.

Rocket-Powered Smoothie

image

Adding greens to your smoothies gives them and you an extra boost of important nutrients: Proteins, Vitamins, Minerals and Fibre.

Rocket, or Arugula, is a cruciferous vegetable – like Kale and Sprouts – which are associated with a lower risk of cancer, in particular lung and colon cancer. It provides Calcium and Vitamin K for bone health, antioxidants, Iron and B Vitamins, including Folate, and contains nitrates, which lower Blood Pressure and the amount of oxygen required during exercise, while enhancing athletic performance.

It has a light, slightly herby flavour and is not at all overpowering when combined with fruit, nuts and seeds. I was pleasantly surprised the first time I tried it when we ran out of Romaine Lettuce.

(Remember to alternate cruciferous with non-cruciferous greens to protect your thyroid health).

This is a thick smoothie, you’ll need a spoon! (You can reduce the oats if you want it thinner).

Ingredients

1 Banana

2 Tbsps Gluten-Free Oats

A Large Handful Rocket Leaves

1 Rounded Tbsp Sunflower Seeds

1 Tbsp Cashew Nut Butter

1 Tsp Wheatgrass Powder

1/2 Mango

1 Tbsp Dried Mango Pieces

Small Glass of Fresh Apple Juice + a little water if you want a thinner smoothie

Blend and serve! Add ice if you’re not sure about the greenery, it helps when you’re not accustomed to green smoothies, but this has such a fruity flavour from the dried mango and apple juice, you’ll be fine ☺️

Golden Cacao Shake

This Shake features some of my favourite nutrient-packed fruit: Peruvian Golden Berries and Blueberries.

image

Golden Berries are regarded by some as one of the Superfoods, being nutritionally dense, and with their sweetly tart flavour they are delicious on their own as a snack, in your breakfast bowl or smoothie. (There is also a recipe for GoGo Berry Fudge on my Raw Treats Recipes page using both Golden and Goji Berries).

Also known as Physalis peruviana, Inca Berry and Cape Gooseberry, Golden Berries are comparatively high in antioxidants, fibre and iron – reportedly, they contain more iron than spinach – as well as protein and Vitamin A, whilst being lower in sugar than other berries.

They contain essential fatty acids that aid in insulin sensitivity and Dr Oz believes Golden Berries also aid in burning fat.*

So here is a recipe for a delicious and nutritious protein-rich thick shake using The Raw Chocolate Company* raw, organic Golden Berries (as I write they are still in the sale). A spoon will be required!

Golden Cacao Shake

(All ingredients are organic where possible, measurements as always approximate).

Ingredients

1 Small Ripe Banana

Handful Blueberries

2 Tbsps Raw Organic Golden Berries*

1 Tbsp Sunflower Seeds

2 Tbsps Gluten-Free Oats

Juice of 2 Apples

2 Tbsps Yogurt of your choice

2 Tbsps Raw Hemp Seeds*

1/2 Tbsp Raw Organic Cacao Powder*

Blend, Sip from a spoon, and be like the funky Jill Scott: Live Your Life Like It’s ‘Golden!’

Smooth and Creamy Hemp Milk

image

I gave up dairy many years ago and relied on rice milk instead. But recently I discovered homemade nut milks and have become a true convert. Much creamier, tastier and more nourishing than the rice version. Lately, though, I tried homemade hemp seed milk for the first time and thought I would share the recipe.

You can use the milk in SMOOTHies, on cereal or to make Spicy Raw Hot Chocolate or try a SMOOTH Cool Chocolate Hemp Milk: just whisk up some hemp milk with some Raw Cacao Powder and Lucuma Powder or Coconut Palm Sugar to taste and plonk in some ice cubes.

There can only be one choice for our music today, let’s get SMOOTH with Santana – see what I did there? – (youtube link here: http://youtu.be/B0WlQsotC1Y (*WARNING* brief flashing lights at beginning) and start blending:

Ingredients
1 Cup Raw Chocolate Company Shelled Hemp Seeds* (no need to soak)
3 Cups Filtered Water
3 Pitted Medjool Dates, depending how sweet you want it
1Tsp Vanilla Extract
Pinch of Pink Himalayan Salt
Optional: 1Tbsp Organic Soya Lecithin or
1 Tsp Coconut Oil to make it creamier

Method
Blend for about a minute until smooth.

Some people like to use it as it is for a fuller flavour and of course you get all the nutrients, but you can also strain it through a nut milk bag . You can always dry the pulp and use it in burgers, cakes or smoothies.
This recipe makes about 1/2 to 3/4 of a litre
It will keep chilled in a sealed container for about 2 or 3 days.

Hemp seeds are a good source of protein, B vitamins, Vitamin E, minerals and omega oils.

Retro Super Blend – Review

image

If you are new to juicing, you will soon realise you need a good blender as well as a good juicer for adding avocado, banana, super greens or protein powders.

There are so many blenders available and everyone has their favourite.

I thought I did too after I bought Juicemaster’s Fusion Booster. It was used every day, two or three times, and was so easy to use: no buttons or settings, just press down the flask, turn clockwise and it goes. It was light, portable, took up hardly any space, was BPA-free and could go in the dishwasher. Perfect for blending-to-go.

Unfortunately it had one serious flaw: the separate black rubber seal on the lid of the blade soon perished and would need replacing every few weeks. It wasn’t very pleasant when I found chopped up bits of rubber in my smoothie! I complained and complained about this design flaw. Customer services were excellent, patiently listened and sent out several free seals – until it was out of guarantee and no longer manufactured. I was so disappointed.

But, someone at Juicemaster* and Retro* was obviously listening! They have just brought out the Retro Super Blend. It matches the Retro Juicer in style and available colours and for me it was love at first sight! In fact, I loved it so much, I bought one for myself and one for a gift, sight unseen.

image

There are so many parts and functions, it seems overwhelming at first, but it couldn’t be easier to use. There are 3 large blender flasks, 2 blades – 1 for blending, 1 for grinding – 2 smaller blender/grinder flasks/cups, pouring cap, 2 screw-on rings for drinking, 2 screw-on lids and a shaker lid. And dishwasher safe. Ideal for family smoothies. Oh, and it has suction feet so it doesn’t travel when in use.

The best thing of all for me is that they have retained the twist and go action of the Fusion Booster. There are no buttons or settings, you just press the flask into position, turn clockwise and off it blends.

I was a little concerned at first about the large diameter of the flasks, it seems they are designed for a man – I can only just get my hand round them – and I thought it might take more pressure to put them in position on the base before turning, but this is not the case.

Everything is so lightweight and simple to use.

We used it first to make cashew nut milk. The Super Blend has a powerful 700w motor – more than twice as powerful as the Breville Blend-Active, a similar design to the Fusion Booster –  and in less than 30 seconds, we had ultra smooth and creamy milk.

image

It made just under a litre of cashew nut milk, some of which we used to make a version of Happenin’ Hemp Protein Smoothie from the enclosed recipe booklet. Again, it took less than 30 seconds, and no bits.

The blender managed the ice cubes in the smoothie with no problems at all.

We have only used it twice, but so far we love it. It will be put through its paces regularly, so watch out for future updates – hopefully, I’ll have little to write but ‘as above’ or ‘still going strong!’

Available in several colours.

Update: A year on, it is still in regular use, often 2 or 3 times a day. We’ve had to replace the seal once, this was provided free of charge. I’ve just bought another at half-price during April (2017). It makes an excellent gift. We gave one to a family member who is a student and she loves it. It has made a healthy improvement to her diet. It’s become our everyday blender. (We use a larger Froothie Optimum 9200 Blender for making larger quantities of nut milk, for instance, or when making smoothies for a few people).

Highly recommended.

Gorgeous Goji Berry Smoothie

image

This protein-packed smoothie features Organic Raw Goji Berry Powder, Organic Shelled Raw Hemp Seeds and Organic Raw Goji Berries (we use The Raw Chocolate Company products*). It can be made in a small blender, we used the kind that can also be used as a flask, so you blend and go.

 All measurements are approximate.
I am a great believer in adaptation and substitution, so don’t panic if you don’t have everything on the list. You are advised, however, not to take this too literally as one family member did when missing out the peas from the raw Pea and Mint Soup and the lentils from the Lentil Stew! Grab Yourself a Slice of Energy: Raw Sweet Apricot Kernel Slices!

Raw Sweet Apricot Kernel Slices

image

These Sweet Apricot Kernel Slices are protein-packed and bursting with so much energy you could be bouncing off the walls! Simple and quick to make, they are excellent for a.m. and p.m pick-me-ups, lunch-boxes and activity snacks. They keep well in a sealed container in the fridge and even keep for a long time in the freezer – if you can resist them that is.  Even the sceptical children in the family love these! They also make a lovely gift.

They are an excellent way to use home-made Sweet Apricot Kernel Butter – see earlier post Gettin’ Jiggy in the Kitchen

All measurements are approximate. Substitutions are ok on a like for like basis. I use organic where possible. They are vegan and gluten-free and very yummy!

(If you want a slightly less chewy bar, briefly soak the goji berries in a little apple juice or water).

Ingredients
1 Cup Raw Chocolate Company* Organic Sweet Apricot Kernels, ground coarsely
1 1/2 Cups Gluten-Free Oats
12 Soft Organic Dried Apricots
2 and a bit Tbsps Water
1 Heaped Tbsp Raw Chocolate Company Chia Seeds
1/2 Cup Raw Chocolate Company Goji Berries
A Generous 1/3 Cup Raw Sweet Apricot Kernel Butter (see earlier recipe)
A Generous 1/4 Cup Organic Maple Syrup
Pinch of Pink Himalayan Salt
1/2 Tsp Vanilla Extract

Method

Place ground kernels in a large mixing bowl
Process oats, apricots and water until the apricots are coarsely chopped
Add to mixing bowl along with Goji Berries and Chia Seeds
In a small saucepan, warm the Sweet Apricot Kernel Butter, Maple Syrup, Sea Salt and Vanilla Extract until smooth and pouring consistency
Add to mixing bowl and mix thoroughly until it starts to come together, clean hands are the best tool for this!
Press into an 8″x 8″ tin lined with greaseproof paper

Refrigerate for several hours to set.
Slice and savour!

PS my husband reckons they taste like Christmas cake and was convinced they were made with almonds.

Gettin’ Jiggy in the Kitchen: Make Your Own Raw Sweet Apricot Kernel Butter

Raw Sweet Apricot Kernel Butter

For this recipe, I have chosen a different take on the usual nut butter recipes.

image

If you’re a raw food newbie, then this will ease you in gently to raw food cuisine. It is so simple, you just need a little patience – or in this case, a little Florence – see later, bad joke!

Raw Sweet Apricot Kernel Butter features my favourite Raw Chocolate Company Raw Organic Sweet Apricot Kernels.*

They are found inside apricot stones and look like small flat almonds. They are sweet and nutty, packed with protein and fibre and contain essential Omega 3 fats, iron, zinc and calcium.

By the magic of my ancient Braun Multipractic food processor we transformed them into yummy butter in less than half an hour. Half an hour, you say! Standing stirring, switching on and off for 30 minutes, surely that’s like watching paint dry, is it going to be worth the effort? YES! It is so simple and so tasty, and you know what they say, patience is a virtue and all good things come to those who wait…

(If you’re using an old food processor like us, be careful it doesn’t start to overheat, process in short bursts. It is well worth it, but a more modern processor/high speed blender will get the job done a lot quicker).

So, to make things more interesting, let’s get jiggy with it: put on some loud music, preferably the kind you can sing along to, and get some moves on while you switch and stir.

Today’s music of choice was Florence and The Machine’s Shake It Out but don’t hold that against me!

Raw Sweet Apricot Kernel Butter

Ingredients
2 Cups of The Raw Chocolate Company Sweet Apricot Kernels.
or 1 1/2 150g bags
Pinch of sea salt

Method

Process in short bursts, frequently scraping down the sides. It will seem like nothing is happening for about 15 minutes and you may start questioning your existence but then miraculously it all starts coming together. After that, it’s up to you how long you keep going, depending on how smooth or crunchy you like it. Some people like to add a teaspoon of coconut oil to help it along, but we kept to the basics.

Makes enough to fill a honey jar. I like it with Nairn’s Gluten-Free Oatcakes but it can easily be used in other recipes. Look on the back of the bag for a sweet and spicy choco version and see also my Sweet Apricot Kernel Slices and other Raw Treats on the   Recipes Page

It makes a lovely gift tied up with a colourful ribbon or string.
