I recently reviewed the new Naked Organic Peeled Tiger Nuts from The Tiger Nut Company (see here) and wrote that I’d post a recipe using the resulting finer, smoother Tiger Nut Milk pulp. I know you’ve been waiting with bated breath, so here it is!
These fruit balls are packed with energy, protein, essential healthy fats, vitamins and minerals and are moist and tasty with a distinct chocolatey orange flavour.
All ingredients are organic, vegan and gluten-free. All measurements are approximate.
Ingredients
1 Cup Naked Tiger Nut Milk Pulp
1 Cup Dried Mango Pieces + 1/4 Cup Goji Berries*
Both soaked in the juice of 1 small orange
1/4 Cup Golden Linseeds/Flaxseeds, partially ground
1/2 Tbsp Chia Seeds,* very lightly moistened
2 Tbsps Melted Raw Cacao Butter*
2-3 Squares Mini Orange & Goji Raw Chocolate,* grated

Pulse and process all the above for a few seconds until it comes together.
Take pieces of the mix and roll them into balls.
Melt the rest of the mini bar of Raw Orange & Goji Chocolate in a bowl over hot but not boiling water, with 1 Tsp of solid Raw Cacao Butter
Dip the fruit balls in the melted chocolate and place in the fridge to set.
The pulp from the Naked Tiger Nuts makes a much finer, smoother texture than the original Organic Unpeeled Tiger Nuts when making energy balls.

I haven’t had Tiger Nuts yet. I love learning about and trying new things. I ordered some this morning.
There is a chufa sedge grass that grows wild here as a weed. It supposedly has edible tubers, but I have never found any from any I have dug up.

Oh good, they make lovely sweet creamy milk, very good for you. We used to eat them as children, they were widely available during the War (before my time I hasten to add!) instead of sweets when sugar was rationed and the habit continued for some years and then they disappeared. They are only just coming to people’s attention again now they are being labelled a superfood.

OOOH! Lovely! Also loving your artfully arranged berries on the plate, what a fine photo that makes 😀 Can these be frozen at all? (Not that they would last that long, but still….I was thinking for camping trips and suchlike)

Oops, just realised I sent my reply to your question about freezing to Bernadette! Basically, yes, anything we make has to go in the freezer. They keep well in an airtight box in the fridge too.

Thank you! Yes, whenever we make anything, most of it goes in the freezer for when family visit – except yesterday, our banana ice-cream went down the gullet of a visiting 13 year old boy who is doing what 13 year old boys do: growing and eating non-stop! 😄 It did last long enough to take a photo though, so on the blog soon.

There are many raw treats in the Menu with no refined sugar and the kods always love them, especially if they include raw chocolate! Look under Raw Chocolate Recipes and Tiger Nut Recipes. Wherever they use milk pulp you can use any nut milk, it will slightly alter the flavour that’s all. Many of them don’t require nut milk pulp. All you need is a food processor and a fridge. No baking required. ☺️
